Ingredients:

  • 1 1/2 cups rolled oats (you can substitute with quick oats or old-fashioned oats)

  • 1/2 cup pumpkin seeds

  • 2 tablespoons hemp seeds

  • 1 teaspoon flax meal (you can substitute with flax seeds)

  • 1 teaspoon pure vanilla extract

  • 5 tablespoons melted coconut oil

  • 1/4 cup pure maple syrup (any liquid sweetener will work)

  • A pinch of salt

 

Instructions:

  1. Preheat the oven to 350°F and grease 6-7 mini tart pans.

  2. In a medium bowl, combine oats, seeds, flax, vanilla, melted coconut oil, maple syrup, and a pinch of salt. Mix until everything is well coated.

  3. Spoon 3-4 tablespoons of the mixture into each tart pan.

  4. Bake for 15-18 minutes or until golden.

  5. Remove from the oven and allow the tarts to cool completely. If you notice the sides have sunk, gently press them back into place with a spoon while still hot.

  6. Once fully cooled, carefully remove the tarts from the pans, using a knife to scrape the sides if necessary. Note that the tarts are delicate.

  7. Fill each tart with yogurt and smooth it evenly.

  8. Top with fruit, coconut shreds, and chia seeds.

  9. Serve immediately to avoid the crust becoming soggy!
